A very tasty dessert that will automatically bring you and your loved ones under the sun of the Caribbean Islands!

Ingredients :
1 pineapple
400 g (2 cups) of sugar (powdered)
1L (4 cups) of water
20g (1,5 tbsp) of butter (unsalted)
1 vanilla bean or a few drops of vanilla extract
spices
1/4 cup of rhum (completely optional)
The spices depend on your taste. Here a few suggestions (nothing required, of course. No spice is fine as well) :
Cloves (3-4, crushed with the back fo your knife)
Star Anise (2-3)
Black Pepper (4-6 grains, crushed with the back of your knife)
TRUST your FEELINGS
Let's head to the kitchen!
1. Prepare the Pineapples
Cut the top and the bottom
Peel the pineapple with your knife. It's easy: just allow your knife to follow the pineapple's curve and slice the skin off!
Cut your pineapple in quarters
Get rid of the "heart" because it will be uncomfortable to chew on
Cut each quarter in four pieces
Side Note: It doesn't matter if your pineapple is ripped or with dark spots. The result will still be perfect!
You're done with the first step!
2. Prepare the Sirup
Just pour the water, the sugar, and the spices of your choice in a pan.
Bring this to a boil so that the sugar dissolves in the water and the spices begin to infuse in the syrup
3. Just Wait
Place the pineapples in a bowl and pour the hot syrup on top of them
Add the vanilla extract (start by adding a little bit and adjust to taste)
Cover with some plastic film and leave it alone for some time. You can wait for 3 to 24 hours.
Make it fit in your schedule!
4. The Roasting
Start by pouring some of the syrup from the bowl to a saucepan and add the lemon's juice
Bring the syrup to a boil
Put the butter in another pan
Add the pieces of pineapples to this pan when the butter starts to foam
Quickly snack the pineapples (3 minutes on each side)
Pour the boiling syrup in the pan.
You're almost done!
Stir from times to times while waiting for the water to evaporate
The syrup will thicken until turning in a light, very tasty, caramel
Continue stirring so that the pieces of pineapples get coated in this caramel
Stop when the pineapples take a nice golden brown color
You're done! Congrats!
5. (optional) Flambée!
Pour the rhum in the pan with the pineapples
Tilt your pan so that the liquid gathers in a part of the pan, and allow the flame to touch the caramel and rhum beautiful liquid.
Let the alcohol burn.
Congrats! You just made pineapples flambés!
6. (optional) Toppings
I like to cut the pineapples in slices and to serve them with whipped cream.
Vanilla ice cream would also be delicious! Or chocolate, for the chocolate lovers!
Anything that can bring an extra freshness and richness, while fitting in with the caramelized taste of roasted pineapples, is welcomed here!
