Fouace (brioche from Aveyron)

30 min - I always have fouace at my grandma's house. It is delicious! A nice orange blossom taste and a perfect texture. Welcome to Aveyron!




Ingredients:

500 grams of flour (4 cups)

100 grams of sugar (1/2 cup)

100 grams of butter

3 eggs

20 cl of milk

15 grams of baker's yeast

2 tbsp of orange blossom water

1/3 tsp of salt


1. Making the dough:

  • Put the yeast in the lukewarm milk (heat it in the microwave) for 10 minutes

  • Place the flour, the sugar, the eggs, the butter (cut in small pieces), the salt & the orange blossom water into a bowl

  • Stir with your hands

  • After the ten minutes, add the milk& yeast to your bowl

  • Stir for about 15 minutes, you want the dough to gets bit stiffer (it will be very liquid even after 15 minutes, it's normal!). You can look at the video to see the movements needed to develop the dough's structure.


Place your dough in a flowered bowl and leave it to rise for about 3 hours (the dough must at least double)

2. La Fouace

Pinch your dough to make it lose a bit of its air

Form a crown (see video):





Let the crown rise for another hour



Preheat your oven to 410°F or 210°C

Cook your fouace for 20-30 minutes (until nice and golden brown)

5 minutes before it is cooked, brush an egg yolk whisked with a bit of orange blossom water (1,5 tbsp) on your fouace


Sprinkle sugar (pearl sugar if possible) on top of your fouace when it is cooked!


It is going to be delicious!
