30 min - Financiers are really easy to make. These small cakes are perfect for snacks, but can totally be served as deserts. Bon appétit!
Ingredients: (for about 6 financiers)
50 grams of flour
50 grams of almond powder
75 grams of butter
150 grams of sugar
4 egg whites
1/2 tsp of vanilla extract
a pinch of salt
PREHEAT YOUR OVEN TO 170°C or 340°F

Start by melting your butter
In a large bowl, combine the flour, the almond powder, the sugar, and the vanilla extract
Once homogeneous, add your molten butter and stir (the dough will look weird and dry, this is normal!)
Beat your egg whites with a pinch of salt
Slowly incorporate the beaten egg whites into your dough. You want to go very slowly here. Take the time to work carefully. You don't want the beaten egg whites to break!
Pour your dough into your greased molds (small rectangular molds would be ideal, but any type of individual mold can work)
Cook (at 170°C or 340°F) for 15-20 minutes (usually more around 18 minutes, you want these to rise)
Let them cool down in their molds
Once a bit harden, unmold them and enjoy!
