20 minutes - The perfect chocolate cake: soft and mi-cuit. This is a very simple recipe and you will love it, trust me. Bon appétit!

Ingredients:
200 grams of chocolate
200 grams of butter
150 grams of granulated sugar (or 3/4 cup)
40 grams of flour (or 1/3 cup)
3 eggs
PREHEAT to 180°C or 365°F

THE STEP BY STEP RECIPE:
1. Oh Marie, le bain-marie
In a small to medium saucepan: but the chocolate that you have previously broken in small pieces and the butter that you have cut into small pieces as well
Put the saucepan inside of a larger saucepan that you have filled with about an inch (abt 3 cm) of water. You don't want to put too much water because the water would splash into your chocolate, and this will ruin the cake.
Bring the water to a boil and wait for the butter and the chocolate to melt
In the meantime...
2. Structure
In a large bowl, combine the sugar and the eggs
Whisk vigorously (see Les Techniques on Whisking) until obtaining a foamy and a bit paler (see photograph) mixture
3. Combining
Start by pouring the molten chocolate & butter into the sugar & eggs mixture
Stir quickly to avoid letting the hot chocolate cook the eggs
Add in the flour and stir
4. Cooking your cake
Butter your mold (pro tip: butter the mold with salty butter, it enhances the chocolate flavor!)
Pour the dough into your mold
Now is the best part of your patissier life: you can lick the spoons and the bowl (but don't tell anyone) ;)
Cook for 11 minutes
To know if your cake is cooked: put a knife into about the middle of the cake. The blade s to come out a bit humid but with too much uncooked dough attached to it.
