10 min - The smoothest cookies you can make! A recipe from Armand Arnal, chef at La Chassagnette in the South of France. These slightly salty chocolate chip cookies will become your favorites!
Personal Advice: while in lockdown. start making the dough at 3h in order to be able to enjoy a snack of fresh, hot, cookies!
This recipe is inspired by Armand Arnal's cookies. Armand Arnal is the chef at La Chassagnette, a gastronomic restaurant near Arles (Gard, France).

Time : 10 minutes
Ingredients: (for about 10 cookies)
110 grams of butter
175 grams of chocolate
110 grams of brown sugar (1/2 cup)
100 grams of granulated, white, sugar (1/2 cup)
1 egg
225 grams of flour (1.75 cups)
1/2 tsp of baking soda
1/2 tsp of vanilla extract
2-3 pinches of Flaky Salt (if none, you can use kosher salt. It will still bring a nice, punchy taste.)
START BY PREHEATING YOUR OVEN AT 170°C or 350°F
1. The Prep Work:
Start by cutting the butter:
Melt the butter in a microwave
Cut the chocolate in order to obtain chips of different sizes (adjust to your preference!)

2. The dough
Add the molten butter to a large bowl
Add the two sugars and whisk until the mixture becomes pale and foamy
Add the egg and the vanilla extract, stir well
Sift the flour and the baking soda over the bowl
Incorporate the flour and the baking soda in your butter/sugar/egg and vanilla extract mixture
Add the salt and the chocolate chips
Stir well to equally distribute the chocolate chips
You're done!
3. La cuisson/baking your cookies!
There is a video o how to properly shape your cookies a bit further on this page, but here is a step by step guide:
Start by preparing a cup of cold water
You will use a large spoon to shape your dough (the best spoon being an ice cream scoop)
Dip your spoon in the water
Take a big bowl of dough and put it on a tray lined with parchment paper (I used a silicone mat)
Dip your spoon in the cold water
Press on the bowl of dough to create a circle with a diameter of 8-10cm (or about 3,5 inches)

Place the tray in the oven (preheated at 170°C or 350°F) for 8-10 minutes. The cookies have to be crispy on top and soft in the middle. (take into account that they will harden once you get them out of the oven).
Personally I cooked them for 10 minutes and turned my oven to "broil" for 1 minute, but each oven are different.
