25 min - As a French guy, I call this the Italian Ratatouille. Its mediterranean taste is amazing. Enjoy!
Ingredients: (for 5 people)
2 onions (I used a large one)
3 eggplants
2 bell peppers
a can of diced tomatoes (tomato sauce woks fine)
abt 70 grams of olives (adapt to your taste!)
abt the same weight of capers (approximately once again mdr)
the juice of one lemon
1. The prep work
Cut the eggplants in small cubes
Dice the onions (see Les Techniques)
Cut the belle peppers into strips
2. Making your Caponata

The Step by Step Recipe:
Put the oil in a large saucepan
Once hot, fry the eggplants for about 5 minutes (or until they are golden brown)
Take the eggplants out of the saucepan
Cook the onions for 2 minutes
Add the bell peppers
Cook until the onions are translucid
Add the tomato sauce, the olives, the capers, and the lemon juice
Cover and let simmer for at least 15 minutes (the longer the better)
