🇮🇹La Caponata🇮🇹

25 min - As a French guy, I call this the Italian Ratatouille. Its mediterranean taste is amazing. Enjoy!



Ingredients: (for 5 people)

  • 2 onions (I used a large one)

  • 3 eggplants

  • 2 bell peppers

  • a can of diced tomatoes (tomato sauce woks fine)

  • abt 70 grams of olives (adapt to your taste!)

  • abt the same weight of capers (approximately once again mdr)

  • the juice of one lemon


1. The prep work

  • Cut the eggplants in small cubes

  • Dice the onions (see Les Techniques)

  • Cut the belle peppers into strips



2. Making your Caponata

The Step by Step Recipe:

  • Put the oil in a large saucepan

  • Once hot, fry the eggplants for about 5 minutes (or until they are golden brown)

  • Take the eggplants out of the saucepan

  • Cook the onions for 2 minutes

  • Add the bell peppers

  • Cook until the onions are translucid

  • Add the tomato sauce, the olives, the capers, and the lemon juice

  • Cover and let simmer for at least 15 minutes (the longer the better)
