🥧La Pâte Brisée (for your quiches)🥧

5 min - Very easy, trust me! This dough is used in every quiche recipe, it's a must-have! Enjoy!



Ingredients:

300 grams of flour (2+3/8 cups)

150 grams of unsalted butter

8 cl of water (1/3 cup)

1/2 tsp of salt





Making your Pâte Brisée: (video at the bottom of the page!)

  • In a bowl, combine the salt and the flour

Chef Tip: you can feel free to add any spices of dry herbs. Just add them when mixing the flour and the salt. I personally love using curry powder and dried rosemary/thyme. It all depends on your quiche!


  • When nicely incorporated, add your butter cut into small pieces

  • You are now going to "sablé" your butter/flour mixture. To do so, go with the tip of your fingers and try to create a flour/butter dust (you can have pieces of different sizes but you do not want to have large pieces of butter)

  • Add the water and mix with your fingers or with a wooden spoon until you have a homogeneous dough

  • Dump your dough on your work surface and "fraise" (spread your dough with the palm of your hand, gather it in a bowl, and repeat) until you have a smooth dough

  • Cover in plastic wrap and reserve in the fridge for at least 20 minutes.
