Ingredients: (easily for 6 people, but you can freeze your ratatouille to have som ready at any time!)
6 tomatoes
2 eggplants
4 zucchinis
2 bell peppers
2 onions
(optional but very tasty) thyme, rosemary, and bay leaves

Pro tip: leave the zucchinis and the eggplants in a bit of salt for 10 minutes so that the salt absorbs a bit of their water.

Start by adding a nice drizzle of olive oil to a large casserole (or a large saucepan)
Add the onions and a pinch of salt
When the onions are translucid: add the eggplants and the bell peppers
Cook for 5 minutes on medium heat
Add the zucchinis
Cook for 5 minutes on medium heat
Add the tomatoes and the herbs + salt and pepper to taste
Cover and let simmer on low heat until the vegetables are very soft and tender
