🇫🇷La Ratatouille🇫🇷

35 min - Delicious dish from the South of France. Tomatoes, eggplants, zucchinis, onions, and herbs: everything is here to bring your taste buds under the sun with the song of cicadas! Bon appétit!



Ingredients: (easily for 6 people, but you can freeze your ratatouille to have som ready at any time!)

  • 6 tomatoes

  • 2 eggplants

  • 4 zucchinis

  • 2 bell peppers

  • 2 onions

  • (optional but very tasty) thyme, rosemary, and bay leaves


1. Preparing your vegetables:

Pro tip: leave the zucchinis and the eggplants in a bit of salt for 10 minutes so that the salt absorbs a bit of their water.

2. Preparing your ratatouille:

The step by step recipe:

Start by adding a nice drizzle of olive oil to a large casserole (or a large saucepan)

Add the onions and a pinch of salt

When the onions are translucid: add the eggplants and the bell peppers

Cook for 5 minutes on medium heat

Add the zucchinis

Cook for 5 minutes on medium heat

Add the tomatoes and the herbs + salt and pepper to taste

Cover and let simmer on low heat until the vegetables are very soft and tender
