🥧Leek and Goat Cheese Quiche🥧

15 min - Quick and Easy, for sure! Making this quiche is very simple, and it tastes delicious. Enjoy!



Ingredients:

  • 4 leeks

  • 200 grams of goat cheese (or abt 200g, adapt to your taste!)

  • 3 eggs

  • 20 cl of heavy cream (abt 1 cup), or 5-6 tbsp of crème fraîche

  • 20 grams of butter

  • 1 pâte brisée

PLEASE TAKE YOUR DOUGH OUT OF THE FRIDGE NOW (it will be way easier to roll out)


PREHEAT YOUR OVEN to 395°F or 200°C


1. Making the Filling

  • Start by cutting your leeks in 1cm (a bit less than 1/2 inch)

  • Chop your goat cheese into cubes (roughly) just small enough to melt quickly, does not have to be perfect or even here

  • Place your butter in a pan

  • Once molten, add your leeks

  • Cover until the leeks "melt" (you will feel it, they just become more souple and the white parts turn a bit translucid)

  • Take your pan out of the stove and add the goat cheese

  • Stir until the goat cheese is nicely molten in the leeks


  • Break the eggs in a bowl and add your cream

  • Whip until nicely incorporated

  • Salt and pepper to taste

  • Add the leeks to your bowl if it's big enough or wait for the leeks' pan to cool down and then pour your egg/cream mixture in it


2. Making your Quiche

  • Roll out your dough to the desired thickness (I would aim for less than 1/5 inch)

  • "Fonce" your dough in your mold (basically lay it so that it covers every side of your mold)



  • Pour your filling on the dough


  • Cook for 20 minutes
