20 min - Extremely easy yet delicious. A dish from the South of France, perfect for dinner. Enjoy!
Ingredients: (for 5 people)
10 eggs
10 tomatoes (you can do less, 6-7 will work)
3 bell peppers (same here, do with what you have, 1 bell pepper works fine)
2 onions (1 if you lower the number of tomatoes)
1. The prep work:
The easiest ever!
Cut your bell peppers into abt 1 cm or 2/5 inch slices (you really do not have to be exact with this)
Cut the tomatoes into slices of about the same size than the bell peppers
Do the same thing with the onions
2. Making your "oeufs à la tomate":

Place the onions and the bell peppers in a pan drizzled with olive oil
Add the tomatoes once the onions are translucid
Cover and let simmer for 10-15 minutes
Crack the eggs in the pan and let them cook (without covering!) until the whites are cooked through
